Meet the Visionary Behind Merriman’s
Chef Peter Merriman – Founder & Culinary Innovator
Dubbed the “Pied Piper of Hawai‘i Regional Cuisine” by The Los Angeles Times, Peter Merriman has been a champion of locally sourced ingredients long before sustainability became a global movement. When he arrived in Hawai‘i in the early 1980s, he saw the potential for a new culinary approach, one that honored the land (ʻāina) and the people who cultivate it.
By forming strong partnerships with local producers, he helped create the Hawai‘i Regional Cuisine movement, revolutionizing the way food is grown, harvested, and enjoyed in the islands. His “Do The Right Thing” philosophy remains at the heart of everything we do, ensuring that every dish reflects Hawai‘i’s rich cultural heritage and natural bounty.
